Cake Batter Rice Krispy Cake

I adore Pinterest for many reasons.

Recently I wanted to make a birthday cake for my DIL, Kim.

I know her very favorite is a funfetti cake, but I wanted to surprise her with a little something different.  I visited H E R  pin boards and found Cake Batter Rice Krispy Treats.

I made up a batch, pressed it into a heart-shaped pan to show my love and wrapped it up.

So check out your family and friends pins...a perfect place to find a gift selected by the pinner!

{Here's the delicious pin I found on Kim's board.}

from Ali @ Gimme Some Oven

Cake Batter Rice Krispy Treats
  • 3 Tbsp. butter
  • 1 (10 oz.) bag of mini-marshmallows
  • 1/3 cup dry yellow cake mix
  • 5 cups crispy rice cereal
  • 1 (1.75 oz.) container of sprinkles
Melt butter in a large saucepan over low heat and add marshmallows. Stir until they begin to melt, adding in (dry) cake mix one spoonful at a time so its combined. Stir in cereal so it is completely coated with marshmallow mixture. Sprinkle in half of the sprinkles and mix. Press into a baking dish (any size will do) and top with remaining sprinkles. Let sit for about 30 minutes before cutting. I find spraying a knife with nonstick spray helps to cut them.

***Note: Many readers have asked what to do with the remaining cake mix.  If you would like to use it to whip up a batch of cake mix cookies, just measure out 6 oz. of the remaining cake mix, and combine it with 1/4 cup vegetable or canola oil, and 1 egg.  Stir until mixed.  Then form into cookie dough balls, and bake in a 350 degree oven for 10-12 minutes.***

Yummy wishes, pin away friends!

  12. Ok, not only is the funfetti Krispy cake just adorable, but you have also rocked my socks with the part at the end about the leftover mix. I make cake mix cookies all the time, but I never thought (DUH!) to make the batch smaller. Really and truly, I'm feeling like a dip for not doing it.

I want to thank you yet again for praying for us and everything else you did to send encouragement. I hope that as the fog lifts, God gives me my blog voice back, but even if he doesn't, I hope to be inspired by places like Singing With Birds. You never fail to delight me.
    And I do mean never!

  13. Renee, what a fun and pretty idea. I am so in love with Pinterest too. I am typing up a post that I got the recipe off Pinterest the other day. Just wish I had enough time to make everything I post (and that calories and fat didn't count!)
