Ah, Spring fever. Like me, are you down with it?
I am ready to lighten it up, offering fresh, crisp, salads, while spending less time in the kitchen and more time in sunshine! I adore Italian food and wanted to create a composed salad with sausage and white beans. It was so yummy and we will enjoy it out on the patio all summer long.

Good morning Gnee!
ReplyDeleteA perfectly lovely salad to enjoy as the seasons change! The warn sausage is a special treat making this an extra hearty and flavorful salad. Pretty colors too.
It is going to be in the 70's all week here. I suppose that means I should get out and tackle some yard work!
You are up early. I love the sound of this salad. I forgot how much I like beets in salads. We had such warm weather, and then on Sunday it really got cold and rained. Unlike you, I didn't enjoy the warm weather on our deck. Joni
ReplyDeleteMama Mia, this does look good! My husband loves it when I tell him I'm trying a salad inspired by you. We'll definitely do this one, dressing and all. I will, however, have to pull the beets off of his. He won't eat them. That's the beauty of a salad, though, they can be so custom.
ReplyDeleteRenee - you took me to Italy with this one. Sounds fantastic! I thought you weren't blogging anymore so I was so glad to hop over and see! I have been making lots of salads lately trying to get off the winter pounds and this one will fit right in!
ReplyDeleteYummy Renee! Just the name alone is so beautiful and the salad looks simply amazing! I can't wait to try it! Love your pictues!
ReplyDeleteThis is my kind of salad, Renee. Love the addition of beets and peperoncini with all those other yummy ingredients. A large salad is my favorite summertime dinner.
ReplyDeleteThat is a delicious sounding combination.
ReplyDeleteA great way to use beans.

ReplyDeleteWe're having a salad for dinner tonight so I'm all about eating lighter when the weather is warm. This one sounds delicious and one that my hubby would like with the sausage in it. Love that dressing bottle!
ReplyDeleteMmmm, this salad looks so yummy- I need to give this a try!
ReplyDeleteI'm stopping by from the TT&J link up party. Oh yum! I have to give this a try!
ReplyDeleteI love a composed salad that lets me serve the entire meal on one plate - and in the summer, when I've been at the office all day, I don't want to spend any time at all in the kitchen. Good weather is not to be wasted!
ReplyDeletewhat a lovely combination! the salad looks fresh and really delicious
