Chicken to Roar About

Just the other day I heard, "I'd love some of your Apricot Chicken!"  I realized it's been a while since I made this delicious Lion House favorite for my guy. 


Nectar, cornstarch and onion soup mix, combine for a simple yummy sauce.  I also like to add about a cup of snipped dried apricots.  Pour it over washed and dried chicken pieces and bake for an easy, delicious dinner good enough to roar about!


Serve over rice pilaf with a simple salad for a memorable meal that will become a favorite for you too.  Be sure to serve with lots of love!

Apricot Chicken
Recipe from: Lion House Classics
2 tbsp cornstarch
2 cups apricot nectar
1 envelope dry onion soup mix
2 frying chickens cut up or, or 8 chicken breasts
In saucepan, mix cornstarch in small amount of apricot nectar. Add remaining nectar and onion soup mix. Heat and stir until sauce thickens. Pour over chicken pieces that have been washed and dried and arrange in a 9x13 baking dish. Bake covered at 350 degrees for 30 minutes. uncover chicken and bake about 30 minutes or until chicken is tender. Baste several times with sauce. Makes 8 servings

  3. Well, woooohooo! I'm glad you finally put down those grandchildren and fixed me some dinner. I was getting pretty hungry.

    This one will definitely be the meal for Saturday night. I just planned it. The husband is a huge fan of apricots, especially dried ones, and I'm trying for his health's sake to make him a better fan of chicken.

    Honestly, if it were not for your recipes, the man would starve.

  4. This does sound delicious. I make a similar chicken dish using canned whole cranberry sauce and a packet of the onion-mushroom soup mix. It is really good.

  5. I made a similar recipe to this one a while back. It was a favorite of my hubby's from his childhood. Hope you're doing well and getting all settled in the new home. Hopefully no more escaping grandchildren :) Hugs from Nebraska!

  6. Oh that sounds so good, and easy! I make a similar sauce using the onion soup mix, apricot jam and bbq sauce for ribs and chicken. Thanks for sharing.

  10. Oh my, guess what we are having for dinner tonight? That looks so delish! We, too, have been trying to cut the carbs down.
    And I thought our 5 gave us a handful of Grandloves. Aren't they blessings. Your redheads would fit right in our circle of reds. Also love the 'yawn.' so sweet.
    She cooks, she has Grandloves galore, a great Hubby, she loves to organize...I'll be back to learn more.
